The Product
How should I store extra virgin olive oil? Keep bottles and tins away from direct light and heat, at a constant room temperature (ideally between 14 and 18°C / 57-64°F), away from heat sources. Once opened, reseal the cap tightly after each use and consume preferably within 12-18 months to fully enjoy its organoleptic qualities.
What does "cold extracted" mean? It means the olives were processed at a temperature between 25° and 30°C (77-86°F) during pressing, a method that best preserves the oil's aroma, flavor, and nutritional properties, unlike heat extraction, which increases yield but reduces quality.
What do the DOP and IGP certifications on some products mean? DOP (Protected Designation of Origin) certifies that the entire production process — from olive growing to milling — takes place in a specific geographic area according to strict production rules. IGP (Protected Geographical Indication) guarantees that at least one important stage of production takes place in the indicated territory. Both are official certifications recognized by the European Union.
Is your olive oil organic? Yes, our oils come from certified organic farming, without the use of pesticides or synthetic chemical fertilizers, respecting the soil and environment of our olive grove in Ispica.
What's the difference between your varieties (Nocellara, Moresca, Blend)? Each single-variety oil has a distinct organoleptic profile: Nocellara Etnea DOP has a medium fruitiness with herbaceous notes and a balance of bitter and pungent flavors; Moresca offers a milder profile; Blend IGP Sicilia combines different cultivars for a balanced, versatile oil. You'll find the full profile of each product on its product page.
